Simply add 2 tbspns curry paste, handful finely chopped fresh coriander, finely grated ginger, finely chopped red onion, salt and pepper, juice from 1/2 lemon 🍋 and some lemon zest to the mince. 

Squish with your hands until it clumps together and then form 4 patties.

Fry or grill to your taste - alongside the mushrooms - and add your toppings
